Here's what you need:
1/2 pound Italian sausage
2 tablespoon olive oil
1 cup onion, diced
2 14 oz. can stewed tomatoes
1/2 teaspoon oregano, dried
1/2 teaspoon basil, dried
1 bay leaf
6 ounce tomato paste
2 eggs
2 large spinach bunches, washed & cooked

3/4 cup Parmesan cheese, grated
2 cup Mozzarella cheese, grated
1 cup cottage cheese
1/4 cup bread crumbs, dry
1/8 teaspoon nutmeg
1/8 teaspoon garlic powder
salt and pepper, to taste
8 manicotti noodles, cooked
2 tablespoon parsley, fresh, minced

Here's how to make it:
Remove casings from sausage and cook in a large skillet over medium heat, breaking up meat with a spoon. When cooked
through, drain and reserve.
Heat olive oil in a medium skillet over medium heat, add onions, and cook until tender, about 8 minutes. Add stewed
tomatoes, breaking up with hands, dried oregano, basil, bay leaf, and tomato paste. Mix well, bring to a boil then lower
heat and simmer, uncovered, until sauce has boiled down and thickened, about 20 minutes.
Beat eggs lightly in a large bowl. Squeeze excess moisture from spinach, chop and then mix well with 2/3 of the
Parmesan, the mozzarella, and cottage cheese, bread crumbs, nutmeg, garlic powder, reserved cooked sausage, and salt
and pepper to taste.
Fill cooked manicotti with cheese mixture. Ladle a portion of the sauce in two large square aluminum tins and place
stuffed manicotti on the sauce. Pour remaining sauce over noodles, sprinkle with remaining 1/3 of Parmesan and the
parsley.
